Stir Fry Rice


Ingredients :
1) Pre-cooked Rice 2cups
2) Garlic finely chopped 1tbps

3) Green capsicum chopped 1/2cup
4) Yellow capsicum chopped 1/2cup
5) Soya sauce 2tsp
6) Salt to taste
7) Oil 3tbps
8) Spring onions 1/4cup chopped (seperate white and green part of spring onions)
9) White pepper pdr 1/2tsp


Method :
Break up large clumps of rice and separate the grains with wet fingers.
Preheat a skillet over high heat for about half minute. Swirl in the oil and heat until it becomes runny and starts to shimmer.
Reduce heat to medium and add garlic and onion(white of spring onions) and stir until fragrant, about 15 to 30 seconds.
Add chopped capsicums and spring onions(green of spring onions), stir fry for few seconds.
Add rice and keep stirring and tossing.
Add the soya sauce and salt and white pepper to taste.
Stir everything swiftly around the wok until the rice is well-coated and coloured and heated through, about 3 to 4 minutes.
Add more oil if the rice begins to stick to the wok.Taste and adjust seasoning if necessary.
